Herb n’ Kitchen is a fast casual restaurant prototype that replaces the traditional three-meal restaurant within the Hilton Hotels & Resorts brand. The restaurant combines a farmer’s market food station approach within a curated specialty food retail setting. The prototype includes three zones: Grab & Go, Bar, Restaurant. Each of these zones are designed to transition to all three day parts and accommodate various guest demands. As the restaurant transitions from day to night, it feels more intimate to the guest with lighting control, music changes, and sliding doors that can take a large breakfast room down to 50 dinner seats. Supporting a farm to table menu are design details, custom lighting, and materials that support a hand hewn, yet refined palette that is adaptable to the over 550 properties within the Hilton Hotels & Resorts portfolio.
